Baby potatoes are the potatoes which are removed from the soil before they are fully developed/grown. Due to this, you will find that baby potatoes have a sweeter flavour. Since baby potatoes harvested so early, their skin is very thin and tender, often feathering or peeling off. They don't need to be peeled before cooking and are great roasted or boiled. They have a creamy texture.
