Baby potatoes are the potatoes which are removed from the soil before they are fully developed/grown.
Due to this, you will find that baby potatoes have a sweeter flavor.
Since baby potatoes harvested so early, their skin is very thin and tender, often feathering or peeling off.
They don't need to be peeled before cooking and are great roasted or boiled. They have a creamy texture.

Storage: they can last for up to several months in a cool pantry. If stored at room temperature, they are best if eaten within one to two weeks. Once cooked, keep them in the fridge for no more than three days.
