Fresh chestnuts must always be cooked before use and are never eaten raw, owing to their tannic acid content.
You need to either boiling or roasting them.
It's not necessary to soak chestnuts before roasting but it's highly recommended. Soaking chestnuts at least for an hour help them peel so much easier. They also become much softer due to the steam that was created between the shell and the pulp.

Storage: chestnuts are fresh produce and should be refrigerated in a paper bag in the crisper for 2 to 3 days or in an airtight container for up to 10 days, prior to use. Fresh Chestnuts are best if consumed within three weeks of purchase.
