Figs are a great source of calcium and dietary fiber. They are rich in antioxidants and when dried they develop higher percentages of minerals such as copper, magnesium and potassium. They are the sweeter variety, making them a better choice for desserts and as a dried (candied) fig. They are optimal in salads paired with mild goat cheeses, sheep's cheeses and fresh cow's milk cheeses. Figs make incredible jams and sauces, both sweet and savory. They are great accouterments to pork belly and roasted lamb. Figs are also, of course, great for eating fresh out of hand.

Storage: It's important to keep fresh figs cold to slow deterioration. Use them immediately or store in a plastic bag in the coldest part of your refrigerator for up to two days. Fresh figs can be frozen whole, sliced, or peeled in a sealed container for ten to twelve months.
