These meat-stuffed, breaded olives are a typical specialty originating in Ascoli Piceno, central of Italy, in Marche region. Each olive is pitted, then reformed around the stuffing: a combination of two types of meat (beef and turkey), sautéed with a soffritto, stewed in white wine, ground, and mixed with grated Parmigiano Reggiano cheese and a touch of nutmeg. Perfect for a tasty aperitivo or to snack during dinner.
