Storage: store in the freezer. When you need to cook the frozen croissants, take them out, put them on a tray covered with a damp cloth and let them thaw in the fridge then the next morning put them to rise at room temperature until doubled for 2 hours.
How to Cook: the right cooking time is 20-25 minutes in a convection oven, preheated
for 5 minutes, at 170-180°C. These are generally the recommended but if you decide to cook less, then reduce the cooking times by a few minutes.
