Kau choy is best suited for both raw and cooked applications such as steaming, boiling, grilling, braising, and sautéing. When used raw, the stalks and leaves can be shredded and mixed into slaws, or chopped and added to salads for a crunchy bite.

Storage: cover kau choy completely with aluminum foil, folding all 4 sides to make sure it's completely wrapped in foil. Place in a bag and put in crisper drawer in the refrigerator. When you're ready to use it, remove from the refrigerator and wash it.
