In shape alone, it resembles any old cauliflower, but its color is ranging from creamy coral to sunburst orange and it's strikingly unique. The color, it turns out, comes from the extra beta-carotene naturally stored in its florets (which also gives this cauliflower 25% more vitamin A than the more common white variety). Mild, sweet and nutty. The orange and purple cauliflower are higher in antioxidants than regular white cauliflower.
