Natural traditionally cured pork belly. Similar in uses to bacon, but a lighter, fresher flavor. Naturally cured. Pancetta is an Italian, salt-cured meat made from pork belly. It's seasoned with herbs and spices such as garlic, black peppercorns and bay leaves. The cure uses pink salt (or sodium nitrite) to turn the meat a distinctive, bright-red color and dried for several weeks.
