Sustainable Caviar.
Caviar was once the food of kings and czars — and for a sturgeon, it meant death. We use a new technique which consist in massaging the ripe eggs from a female sturgeon — without killing or cutting the fish.
Russian sturgeon caviar has granular, elastic eggs, which are highly valued by true gourmets. The size of eggs varies from 2.6 to 2.8 mm.
The color can be from light brown to dark bronze, up to gray-black. The taste is interesting and expressive, sometimes with wonderful nutty tones.
MALOSSOL is pasteurized caviar, which is additionally subjected to a gentle heat treatment, which significantly extends the shelf life, while maintaining its unsurpassed quality.
In the manufacture of this caviar, only salt is used and no other preservatives are used.
