Wild-Caught Frozen Golden Redfish, whole fish with no head. The flesh is firm and moist and responds well to frying or grilling. The fresh taste of cucumber goes well with this fish. Just add a little acidity, salt, a mild onion and black pepper. Grilled or fried in butter. Serve with a crème fraîche-based sauce, flavored with mustard, lemon, tarragon and plenty of chives, for example. Redfish has a mild and sweet taste that works well with herbs, spices and different flavours. White/red-ish tint, bright white after cooking. Golden Redfish is exceedingly versatile.
