When you open a pickled product you must be careful to draw on its contents with always clean cutlery to avoid contact with other "foreign bodies" which could compromise its good preservation; also make sure that the contents are completely submerged in the oil, air is the enemy of preserved products! The oil used for our preserves is extra virgin olive oil, therefore the ideal temperature for its conservation is between 14 and 18 degrees centigrade. Store the pickles in the cupboard, as long as the temperatures are not very high.
