The phyllo or phyllo pasta is a very fine pasta, of Greek origin, also widely used in the cuisine of the Middle East, which can be purchased ready in rolls or in very thin sheets.
From the Middle East, filo pastry has gradually spread to Italian cuisine, where today it is highly appreciated for preparing sweet and savory dishes, with tasty condiments, accompanied by delicious sauces.
It is a very thin puff pastry made from a dough made up of flour, water, oil and a pinch of salt. Thin as a veil and typically crunchy, phyllo dough is useful in the preparation of numerous recipes. Baked or fried, it is ideal for giving the right balance of textures.
